Smoked salmon and dill fish cakes

This is one of my boyfriend's favourite things to make (and eat!),  so on a snowy weekday night in London, hungry and cold, we set to our supper task!

What you will need: (to make 8 fish cakes)
300g Smoked Salmon
3tbsp Capers
1tbs chopped fresh (or dried) Dill
1 lemon
A handful of chives
6 large potatoes
2 large knobs of butter
1/4 pint milk
Seasoning (salt and pepper)

What you need to do:
  • Chop up finely: salmon, potato, chives and dill
  • Pre-heat oven to 180degrees

  • Boil potato until soft and mash up

  • Add all the ingredients in to the mash potato and mix until evenly blended

  • Mould in to patties of any size you want. I usually mould mine in a ramekin  with some oil

  • In a frying pan, place the patties and fry until golden brown on each side
  • Put the patties on to a floured baking sheet and put in the oven for about 25 minutes until totally golden brown with a crisp shell (Depending on how hungry you are, you don't necessarily have to bake them! ;o) )

  • Serve with a salad of your choice and a big bit of lemon to squeeze on top of your fish cakes!
Enjoy! x
